recipe: oat waffles

 A recent conversation with one of my bff's drove me to share our not so secret healthy recipe for waffles. If you are serving this to people that are "anti-healthy eating" just don't tell them it's healthy or flourless. They will enjoy it all the same. 

We foodies are in a constant battle with filling our hearts (tummies) with yummy goodness or exhibiting the type of determination and health consciousness to "eat healthy" or diet.
Any fatty or foodie knows that the biggest problem with most diets is that if you are not satisfied or full after a meal- it will probably result in a) quitting the diet or b) cheating on the diet.
With that in mind, Daddy B has been searching for good wholesome recipes that will not only be tasty, but fill us up guilt free.

And their gluten free waffles is a perfect recipe that is tasty, flourless and a great filler.


We usually triple the recipe. 
We live in Belize, so instead of using maple syrup we used honey. 
Since we are trying to make the recipe as healthy as possible we use a lot less butter and honey than the recipe calls for. 
We use soy or light milk and sometimes add more milk than the recipe calls for to get a smoother softer batter.
The batter can be stored in the refrigerator- once you are ready to use, you might just need to add a bit more milk. 
You can eliminate the honey all together and just add ripe bananas for the best banana waffles you have ever tasted.

Bernie's Burger Bus- Houston, Tx

Bernie's Burger Bus- Houston
Breezy Bree loves busses! It's not her fault- it's more like a family trait! Lol 
This is why Daddy B couldn't resist tracking down Bernie's Burger Bus to take her for lunch!
They also started off as a food truck/food bus and now have settled in a physical location with the school is still being a huge part of their decor- the kitchen is actually in the school bus. And the theme of decor and menu names are all school related which is pretty cool.

The burgers were awesome. Mommy B had the homeroom with the egg over-easy...drippy, juicy goodness! Daddy B had the Detention.
The Lunch Lady fries could have used a bit more cheese for our likings. and maybe even the Honor Roll fries... But the brisket on the Honor Roll made it soooo goooddd.
But what topped off
this meal was their donut icecream (actually tastes like donut) and their awesome peanut butter shake that Breezy Bree could not get enough of.

Continuing on our food truck expeditions- we hunted down a location for Good Dog - they started as a hotdog truck and now have a physical location 
The location had some pretty neat artwork and displayed their awards.
Breezy Bree was all over the cheese fries and corn dog. It was her first corn dog ever! As u can see in the photos she was clearly asking the corn dog, "where have u been all my life?!"
Mommy B enjoyed a guac-a-dog and Daddy B enjoyed an ol' zapata both pretty delicious
We got some pretzels dogs to go and Mommy B thought those were pretty awesome.

Houston, TX - Tacos Truck- Tiera Caliente


Heyyyy! Last week Breezy Bree accompanied Mommy B and Daddy B to Houston. We roamed different areas in search of food trucks... And we're glad to report that our findings were a hit!

Let's start off with Tacos Tierra Caliente
The flavor is different from any other taco truck we have tasted. It's not anything exotic- it's just good tacos and quesadillas and even breakfast tacos. Tacos are topped with onions and cilantro with two sauces on the size.

introduction to blog

Hi Everyone,

Let me introduce myself as a first-time Blogger!
The theme for this blog is to explore food... food around Belize, and food from places we travel.
BreezyBree is my 20 month old daughter- who is as much a foodie as mommy and daddy.
